- 2 large sweet potatoes, peeled and thinly sliced (about 1/4 inch thick)
- 1 red onion, thinly sliced
- 4 ounces goat cheese, crumbled
- 2 tablespoons olive oil
- 1/4 cup chopped fresh thyme
- 1/4 cup honey
- Salt and pepper to taste
Instructions
- Step 1: Preheat oven to 400°F (200°C). Lightly grease a baking sheet.
- Step 2: Toss the sweet potato slices and red onion slices with olive oil, salt, pepper, and half of the thyme in a large bowl until evenly coated.
- Step 3: Arrange the sweet potato and onion slices in stacks of 3-4 slices each on the prepared baking sheet.
- Step 4: Bake for 20-25 minutes, or until the sweet potatoes are tender and slightly caramelized.
- Step 5: Remove from the oven and top each stack with crumbled goat cheese, a drizzle of honey, and the remaining fresh thyme.
Notes
- Store leftover stacks in an airtight container in the refrigerator for up to 3 days.
- Reheat individual stacks in the microwave for about 30 seconds, or until warmed through.
- Serve these sweet potato stacks as a vibrant side dish alongside roasted chicken or grilled pork.
- For a deeper flavor, try caramelizing the onions separately before assembling the stacks.
