Ingredients
Scale
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/2 cup crumbled feta cheese
- 1/4 cup hot honey (or more, to taste)
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon red pepper flakes (optional, for extra heat)
Instructions
- Step 1: In a medium bowl, combine the chicken cubes, feta cheese, hot honey, olive oil, lemon juice, oregano, garlic powder, and red pepper flakes (if using). Toss everything together until the chicken is evenly coated.
- Step 2: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
- Step 3: Spread the chicken mixture in a single layer on the prepared baking sheet.
- Step 4: Bake for 20-25 minutes, or until the chicken is cooked through and the feta cheese is melted and slightly browned. Internal temperature should reach 165°F (74°C).
- Step 5: Remove from the oven and let rest for a few minutes before serving. Serve hot. Optionally, garnish with fresh parsley or a drizzle of extra hot honey.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat gently in the microwave or oven, avoiding overcooking which can dry out the chicken.
- Serve this dish over a bed of creamy polenta or alongside a vibrant Greek salad for a complete meal.
- For an extra burst of flavor, marinate the chicken in the honey mixture for at least 30 minutes before baking.
