Ingredients
- Chicken breasts: 2, boneless and skinless (about 6 oz each)
- Feta cheese: 4 ounces, crumbled
- Hot honey: 3 tablespoons
- Olive oil: 2 tablespoons
- Garlic: 2 cloves, minced
- Red pepper flakes: 1/4 teaspoon (or more to taste)
- Fresh thyme: 1 teaspoon, chopped
- Lemon juice: 1 tablespoon
Instructions
- Step 1: Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
- Step 2: In a small bowl, combine the hot honey, minced garlic, red pepper flakes, thyme, and lemon juice. Stir well to combine.
- Step 3: Place the chicken breasts in the prepared baking dish. Drizzle with olive oil and season with salt and pepper.
- Step 4: Bake the chicken for 20-25 minutes, or until cooked through and no longer pink inside. The internal temperature should reach 165°F (74°C).
- Step 5: Remove the chicken from the oven and brush generously with the hot honey mixture. Sprinkle the crumbled feta cheese over the top.
- Step 6: Return the dish to the oven for another 3-5 minutes, or until the feta is slightly softened and warmed through. Serve immediately.
Notes
- Store leftover chicken in an airtight container in the refrigerator for up to 3 days.
- Reheat individual portions in the microwave or oven, adding a splash of water or broth to keep the chicken moist.
- Serve this dish with a side of quinoa or couscous to soak up the delicious hot honey sauce.
- For a bolder flavor, marinate the chicken in half of the hot honey mixture for at least 30 minutes before baking.
