Ingredients
- All-purpose flour: 1 1/2 cups
- Cold unsalted butter, cut into cubes: 1/2 cup (1 stick)
- Granulated sugar: 1/4 cup
- Salt: 1/4 teaspoon
- Large ripe peaches, peeled and sliced: 4 cups
- Cornstarch: 3 tablespoons
- Lemon juice: 1 tablespoon
- Brown sugar, packed: 1/2 cup
Instructions
- Step 1: Preheat oven to 375°F (190°C). In a large bowl, combine flour, butter, granulated sugar, and salt. Cut the butter into the flour using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Step 2: Press the mixture evenly into the bottom of an ungreased 9×13 inch baking pan. Bake for 15-20 minutes, or until lightly golden.
- Step 3: While the crust is baking, prepare the peach filling. In a large bowl, gently toss sliced peaches with cornstarch, lemon juice, and brown sugar.
- Step 4: Remove the crust from the oven and carefully pour the peach filling evenly over the baked crust.
- Step 5: Bake for an additional 30-35 minutes, or until the peach filling is bubbly and the crust is golden brown.
- Step 6: Let the bars cool completely in the pan before cutting into squares and serving.
Notes
- For best flavor, store cooled peach bars in an airtight container in the refrigerator.
- A quick zap in the microwave will make the bars warm and gooey again, perfect with a scoop of vanilla ice cream.
- Dust the bars with powdered sugar just before serving for an extra touch of elegance and sweetness.
- Don't overmix the crust ingredients; gently cutting in the butter creates a delightfully tender base.
