Ingredients
- Large sweet onions, such as Vidalia: 3 large
- Butter: 1/2 cup (1 stick), melted
- All-purpose flour: 1/4 cup
- Milk: 2 cups
- Sharp cheddar cheese, shredded: 2 cups
- Salt: 1 teaspoon
- Black pepper: 1/2 teaspoon
- Paprika: 1/4 teaspoon
Instructions
- Step 1: Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- Step 2: Peel and thinly slice the onions. Separate the slices into rings.
- Step 3: In a large bowl, toss the onion rings with the melted butter.
- Step 4: In a separate saucepan, whisk together the flour and milk. Cook over medium heat, stirring constantly, until the sauce thickens.
- Step 5: Remove from heat and stir in 1 1/2 cups of the cheddar cheese, salt, pepper, and paprika until the cheese is melted and the sauce is smooth.
- Step 6: Pour the cheese sauce over the onion rings in the bowl and stir to coat evenly. Transfer the mixture to the prepared baking dish. Sprinkle the remaining 1/2 cup of cheddar cheese over the top.
- Step 7: Bake for 30-40 minutes, or until the onions are tender and the cheese is melted and bubbly. Let cool slightly before serving.
