Ingredients
- Chicken salami: 1 pound
- Mozzarella cheese balls: 16 small balls
- Black olives (pitted): 8
- Ketchup: 1/4 cup
- Mayonnaise: 2 tablespoons
- Mustard: 1 teaspoon
- Wooden skewers: 8
- Fresh parsley (optional): for garnish
Instructions
- Step 1: Cut the chicken salami into 1/2-inch thick slices. You will need about 16 slices.
- Step 2: Use a small spoon or melon baller to create a small indentation in the center of each salami slice. This will hold the "eyeball."
- Step 3: Place a mozzarella ball into the indentation of each salami slice.
- Step 4: Cut the black olives in half. Place one olive half on top of each mozzarella ball to resemble the pupil of an eye.
- Step 5: Carefully thread two "eyeballs" onto each wooden skewer.
- Step 6: Mix the ketchup, mayonnaise, and mustard in a small bowl. Serve the "skewered chicken salami eyeballs" with the dipping sauce. Garnish with fresh parsley, if desired.
Notes
- Refrigerate any leftover skewers immediately and consume within 24 hours to maintain the salami's freshness.
- For a quick reheat, microwave the skewers for 15-20 seconds, but be careful not to melt the mozzarella too much.
- Serve these spooky skewers as a fun appetizer at a Halloween party or as a quirky snack for kids.
- To prevent the salami from tearing when making the indentations, slightly warm it in the microwave for a few seconds first.
