Ingredients
- Chicken breasts: 2 large, boneless, skinless
- Fresh mozzarella: 8 ounces, sliced
- Fresh basil: 1/2 cup, chopped
- Heavy cream: 1 cup
- Olive oil: 2 tablespoons
- Garlic: 2 cloves, minced
- Parmesan cheese: 1/4 cup, grated
- Salt and pepper: to taste
Instructions
- Step 1: Preheat oven to 375°F (190°C). Season chicken breasts with salt and pepper.
- Step 2: Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken breasts for 2-3 minutes per side, until lightly browned. Remove chicken from the skillet and set aside.
- Step 3: In the same skillet, sauté minced garlic for 1 minute until fragrant. Pour in heavy cream and bring to a simmer. Stir in chopped basil and grated Parmesan cheese.
- Step 4: Return the chicken breasts to the skillet. Top each chicken breast with sliced mozzarella cheese.
- Step 5: Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the mozzarella is melted and bubbly.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For best results, reheat individual portions gently in a skillet over low heat with a splash of extra cream to prevent drying.
- Serve this creamy chicken with a side of crusty bread to soak up all the delicious basil cream sauce.
- Don't overcrowd the skillet when searing the chicken; sear in batches if needed to ensure even browning.
