- Boneless, skinless chicken breasts: 2 (about 6-8 ounces each)
- Feta cheese: 4 ounces, crumbled
- Hot honey: 3 tablespoons
- Olive oil: 2 tablespoons
- Lemon juice: 1 tablespoon
- Garlic: 2 cloves, minced
- Red pepper flakes: 1/2 teaspoon (or more, to taste)
- Dried oregano: 1 teaspoon
Instructions
- Step 1: Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
- Step 2: In a small bowl, whisk together the hot honey, olive oil, lemon juice, minced garlic, red pepper flakes, and dried oregano. This is your hot honey sauce.
- Step 3: Place the chicken breasts in the prepared baking dish. Pour half of the hot honey sauce over the chicken, ensuring it's evenly coated.
- Step 4: Bake the chicken for 20-25 minutes, or until it is cooked through and the internal temperature reaches 165°F (74°C).
- Step 5: Remove the chicken from the oven and sprinkle the crumbled feta cheese over the top. Drizzle the remaining hot honey sauce over the feta.
- Step 6: Return the dish to the oven for another 2-3 minutes, or until the feta is slightly softened and warmed through. Serve immediately.
Notes
- Store leftover chicken in an airtight container in the refrigerator for up to 3 days.
- For best results, reheat the chicken gently in the oven to prevent it from drying out.
- Serve this dish with a side of quinoa or roasted vegetables to balance the richness.
- Don't be shy with the red pepper flakes if you like a good kick, but remember you can always add more after baking!
