Ingredients
Scale
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 2 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Step 1: In a medium bowl, whisk together the olive oil, red wine vinegar, minced garlic, oregano, basil, salt, pepper, and red pepper flakes (if using).
- Step 2: Add the chicken pieces to the bowl, ensuring they are fully coated in the marinade.
- Step 3: Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor. The longer it marinates, the more flavorful the chicken will be.
- Step 4: Preheat your grill, broiler, or oven to medium-high heat.
- Step 5: Remove the chicken from the marinade and discard the marinade. Grill, broil, or bake the chicken until cooked through and the internal temperature reaches 165°F (74°C).
- Step 6: Serve immediately and enjoy!
Notes
- Store leftover marinated chicken in an airtight container in the refrigerator for up to 3 days.
- For perfectly juicy reheated chicken, gently warm it in a skillet with a splash of olive oil or in the microwave, avoiding overcooking.
- Serve this flavorful Greek chicken over a bed of fluffy rice or alongside a vibrant Greek salad for a complete and satisfying meal.
- To enhance the garlic flavor, lightly toast the minced garlic in the olive oil before adding the other marinade ingredients.
