Ingredients
- Greek Yogurt (plain, non-fat): 1 cup
- Peanut Butter (creamy or crunchy): 1/2 cup
- Honey: 2 tablespoons
- Vanilla Extract: 1 teaspoon
- Mini Chocolate Chips: 1/4 cup
- Salt: 1/8 teaspoon
- Graham cracker crumbs: 2 tablespoons
- Coconut Oil: 1 teaspoon (optional, for drizzling)
Instructions
- Step 1: In a medium bowl, combine the Greek yogurt, peanut butter, honey, vanilla extract, and salt. Mix well until everything is fully incorporated and smooth.
- Step 2: Gently fold in the mini chocolate chips and graham cracker crumbs. Make sure they are evenly distributed throughout the yogurt mixture.
- Step 3: Line a baking sheet with parchment paper or a silicone mat.
- Step 4: Drop spoonfuls of the yogurt mixture onto the prepared baking sheet. Aim for bite-sized portions, about 1-2 tablespoons each.
- Step 5: Place the baking sheet in the freezer and freeze for at least 2 hours, or until the bites are solid.
- Step 6: (Optional) Melt coconut oil and drizzle over the frozen bites before serving. Store the frozen yogurt bites in an airtight container in the freezer.
Notes
- For easier serving, let the bites sit at room temperature for just a minute or two before enjoying.
- Store these peanut butter delights in a freezer-safe bag to prevent freezer burn and keep them fresh for longer.
- A sprinkle of flaky sea salt on top just before freezing enhances the sweet and salty flavor profile.
- If the mixture is too soft to form nice bites, freeze it for 30 minutes to firm it up before spooning onto the baking sheet.
