Ingredients
Scale
- 2 Chicken breasts (about 6 oz each)
- 1 tablespoon Olive oil
- 1/2 teaspoon Garlic powder
- 1/4 teaspoon Paprika
- 1/4 teaspoon Salt
- 1/4 teaspoon Black pepper
- 1 cup Broccoli florets
- 1/2 cup Cooked quinoa
Instructions
- Step 1: Preheat oven to 400°F (200°C). Lightly grease a baking sheet.
- Step 2: In a small bowl, combine garlic powder, paprika, salt, and pepper.
- Step 3: Rub the spice mixture evenly over both sides of the chicken breasts.
- Step 4: Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken breasts for 2-3 minutes per side, until lightly browned.
- Step 5: Add broccoli florets to the skillet around the chicken.
- Step 6: Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until chicken is cooked through and broccoli is tender. Serve immediately with cooked quinoa.
Notes
- Store leftover chicken and broccoli in an airtight container in the refrigerator for up to 3 days.
- Reheat leftovers gently in the microwave or oven to prevent the chicken from drying out.
- For an extra touch of flavor, drizzle a squeeze of lemon juice over the chicken and broccoli before serving.
- Don't overcrowd the skillet – if needed, sear the chicken one at a time to ensure even browning.
