- 1.5 lbs Boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 cup All-purpose flour
- 1 tsp Salt
- 1/2 tsp Black pepper
- 1/2 cup Milk
- 1 large Egg
- 4 cups Air-popped popcorn (no butter or salt)
- 1 cup Honey BBQ sauce
Instructions
- Step 1: Preheat oven to 400°F (200°C). Lightly grease a baking sheet.
- Step 2: In a shallow dish, combine flour, salt, and pepper. In another shallow dish, whisk together milk and egg. Place the popcorn in a large zip-top bag and crush it into smaller pieces with a rolling pin.
- Step 3: Dip each chicken piece in the flour mixture, then in the milk/egg mixture, and finally coat thoroughly with the crushed popcorn.
- Step 4: Arrange the coated chicken pieces on the prepared baking sheet, making sure they are not overcrowded.
- Step 5: Bake for 20-25 minutes, or until the chicken is cooked through and the popcorn is golden brown.
- Step 6: While the chicken is baking, warm the Honey BBQ sauce in a saucepan over low heat. Once chicken is done, toss with warm BBQ sauce. Serve immediately.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For best results, reheat in a preheated oven or air fryer to re-crisp the popcorn coating.
- Serve this popcorn chicken with a side of creamy coleslaw or crispy fries for a complete meal.
- For extra flavor, try adding a pinch of smoked paprika to the flour mixture before coating the chicken.
