- Chicken sausage, sliced: 1 pound
- Sweet potatoes, peeled and cubed: 2 medium
- Olive oil: 2 tablespoons
- Garlic, minced: 4 cloves
- Honey: 3 tablespoons
- Soy sauce: 2 tablespoons
- Red pepper flakes: 1/4 teaspoon (optional)
- Green onions, chopped: 2 tablespoons
Instructions
- Step 1: Preheat oven to 400°F (200°C). Toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper on a baking sheet.
- Step 2: Roast the sweet potatoes for 20 minutes, flipping halfway through, until they are almost tender.
- Step 3: While the sweet potatoes are roasting, prepare the honey garlic sauce. In a small bowl, whisk together the honey, soy sauce, minced garlic, and red pepper flakes (if using).
- Step 4: Remove the sweet potatoes from the oven and add the sliced chicken sausage to the baking sheet. Drizzle the honey garlic sauce evenly over the sweet potatoes and sausage.
- Step 5: Return the baking sheet to the oven and bake for another 10-15 minutes, or until the sausage is cooked through and the sweet potatoes are tender and glazed.
- Step 6: Garnish with chopped green onions before serving.
