Ingredients
- Ladyfingers: 24
- Mascarpone cheese: 16 ounces
- Heavy cream: 1 cup
- Granulated sugar: 1/2 cup
- Amaretto liqueur: 1/4 cup
- Strong brewed coffee, cooled: 1 cup
- Cherry preserves: 1/2 cup
- Unsweetened cocoa powder: 2 tablespoons
Instructions
- Step 1: In a large bowl, beat the mascarpone cheese, heavy cream, and sugar together until smooth and slightly thickened. Gently stir in the Amaretto liqueur.
- Step 2: In a shallow dish, combine the cooled coffee and 2 tablespoons of Amaretto. Quickly dip each ladyfinger into the coffee mixture, being careful not to soak them completely.
- Step 3: Arrange half of the dipped ladyfingers in a single layer in the bottom of an 8×8 inch baking dish. Spread half of the mascarpone mixture over the ladyfingers, then spread the cherry preserves evenly over the mascarpone.
- Step 4: Arrange the remaining dipped ladyfingers over the cherry preserves, followed by the remaining mascarpone mixture.
- Step 5: Cover the tiramisu with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld.
- Step 6: Before serving, dust the top of the tiramisu generously with unsweetened cocoa powder. Cut into squares and serve chilled.
Notes
- To keep your tiramisu fresh, store it covered in the refrigerator for up to 3 days, but remember the ladyfingers will continue to soften over time.
- This tiramisu is best served chilled, and doesn't reheat well, so just take out what you plan to eat.
- Garnish each serving with a fresh cherry or a drizzle of extra cherry preserves for an elegant presentation.
- For an extra boost of cherry flavor, warm the cherry preserves slightly before spreading to make them more fluid and fragrant.
