Ingredients

  • Ladyfingers: 24
  • Mascarpone cheese: 16 ounces
  • Heavy cream: 1 cup
  • Granulated sugar: 1/2 cup
  • Amaretto liqueur: 1/4 cup
  • Strong brewed coffee, cooled: 1 cup
  • Cherry preserves: 1/2 cup
  • Unsweetened cocoa powder: 2 tablespoons

Instructions

  1. Step 1: In a large bowl, beat the mascarpone cheese, heavy cream, and sugar together until smooth and slightly thickened. Gently stir in the Amaretto liqueur.
  2. Step 2: In a shallow dish, combine the cooled coffee and 2 tablespoons of Amaretto. Quickly dip each ladyfinger into the coffee mixture, being careful not to soak them completely.
  3. Step 3: Arrange half of the dipped ladyfingers in a single layer in the bottom of an 8×8 inch baking dish. Spread half of the mascarpone mixture over the ladyfingers, then spread the cherry preserves evenly over the mascarpone.
  4. Step 4: Arrange the remaining dipped ladyfingers over the cherry preserves, followed by the remaining mascarpone mixture.
  5. Step 5: Cover the tiramisu with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld.
  6. Step 6: Before serving, dust the top of the tiramisu generously with unsweetened cocoa powder. Cut into squares and serve chilled.

Notes

  • To keep your tiramisu fresh, store it covered in the refrigerator for up to 3 days, but remember the ladyfingers will continue to soften over time.
