- Boneless, skinless chicken breasts 2 lbs
- Fresh blackberries 1 pint
- Bourbon 1/4 cup
- Balsamic vinegar 2 tablespoons
- Honey 1 tablespoon
- Olive oil 2 tablespoons
- Garlic, minced 2 cloves
- Salt and pepper to taste
Instructions
- Step 1: Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes per side, or until cooked through. Remove chicken from skillet and set aside.
- Step 2: In the same skillet, add the blackberries, bourbon, balsamic vinegar, honey, and garlic. Bring to a simmer, stirring occasionally.
- Step 3: Reduce heat to medium-low and let the sauce simmer for 8-10 minutes, or until it has thickened slightly and the blackberries have softened. Use the back of a spoon to gently crush some of the blackberries to release their juices.
- Step 4: Return the cooked chicken breasts to the skillet and coat them evenly with the blackberry bourbon sauce.
- Step 5: Simmer for another 2-3 minutes to allow the chicken to heat through and absorb the flavors of the sauce.

- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For best results, reheat the chicken in a skillet over medium-low heat with a splash of chicken broth to keep it moist.
