  • Boneless, skinless chicken breasts 2 lbs
  • Fresh blackberries 1 pint
  • Bourbon 1/4 cup
  • Balsamic vinegar 2 tablespoons

  • Olive oil 2 tablespoons
  • Garlic, minced 2 cloves
  • Salt and pepper to taste

Instructions

  1. Step 1: Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes per side, or until cooked through. Remove chicken from skillet and set aside.
  2. Step 2: In the same skillet, add the blackberries, bourbon, balsamic vinegar, honey, and garlic. Bring to a simmer, stirring occasionally.
  3. Step 3: Reduce heat to medium-low and let the sauce simmer for 8-10 minutes, or until it has thickened slightly and the blackberries have softened. Use the back of a spoon to gently crush some of the blackberries to release their juices.
  4. Step 4: Return the cooked chicken breasts to the skillet and coat them evenly with the blackberry bourbon sauce.
  5. Step 5: Simmer for another 2-3 minutes to allow the chicken to heat through and absorb the flavors of the sauce.
