- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 3/4 cup granulated sugar
- 1/3 cup vegetable oil
- 2 large eggs, beaten
- 1 cup mashed ripe bananas (about 2–3 medium)
Instructions
- Step 1: Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
- Step 2: In a large bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Step 3: In a separate bowl, combine the sugar, oil, and eggs. Stir in the mashed bananas until just combined.
- Step 4: Add the wet ingredients to the dry ingredients and stir until just moistened. Do not overmix.
- Step 5: Fill each muffin cup about 2/3 full.
- Step 6: Bake for 18-20 minutes, or until a wooden skewer inserted into the center comes out clean. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
