Ingredients
- Chicken drumsticks or thighs: 2 lbs
- Panko breadcrumbs: 1 1/2 cups
- Parmesan cheese, grated: 1/2 cup
- Garlic powder: 1 teaspoon
- Paprika: 1 teaspoon
- Salt: 1/2 teaspoon
- Black pepper: 1/4 teaspoon
- Hot honey: 1/2 cup (or more to taste)
Instructions
- Step 1: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Step 2: In a large bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper. Mix well.
- Step 3: If desired, pat chicken dry with paper towels for extra crispiness. Dredge each piece of chicken in the breadcrumb mixture, pressing firmly to adhere.
- Step 4: Place the breaded chicken on the prepared baking sheet, making sure not to overcrowd.
- Step 5: Bake for 35-40 minutes, or until the chicken is cooked through and the breading is golden brown and crispy. Internal temperature should reach 165°F (74°C).
- Step 6: During the last 5 minutes of baking, brush or drizzle the hot honey evenly over the chicken. Return to the oven to caramelize the honey slightly. Serve immediately.
Notes
- Store leftover baked chicken in an airtight container in the refrigerator for up to 3 days.
- Reheat chicken in the oven or air fryer to revive the crispy texture; microwaving will make it soggy.
- Serve this crunchy chicken with a side of creamy coleslaw or mashed sweet potatoes for a balanced meal.
- For extra flavor, try adding a pinch of cayenne pepper to the breadcrumb mixture to complement the hot honey!
